Clean Eating Menu Week 3

Wow!  Can’t believe I am already posting week three meals!  I made it to day 14 without cheating.  Today I had a cheat meal and it was less than stellar.  Chips and salsa were good but the meal was cold and unimpressive!  Kind of sorry that I cheated.  Anyways, I am really excited that so many of you are joining me on this journey.  I am happy to say I am on a roll right now and so are many others.  Gotta stay strong and say no to sugar and preservatives.  I know a handful of girls that have already lost 4-6 pounds just by eating clean for 14 days.  That is amazing.  Here are some fun menu items to try next week!

Also, on a side note, I saw a new crockpot that I really want!  It has a cast aluminum insert that you can use on the stove to saute veggies and meat first and then just put into the base to finish cooking.  Genius!

Week 3

Meal 1:  Southwest meatloaf – Clean Eating Magazine

2 poblano peppers

1 jalapeno pepper

1 white onion sliced

2 lbs lean ground beef or ground turkey

1/3 cup whole wheat bread crumbs

1 egg

1 clove garlic

1 tsp chili powder

1 tsp fresh ground pepper

Pinch of sea salt

Preheat over to 350.  In pan blacken all peppers and onions on both sides. Dice onions and set aside.  Move peppers to a bowl and cover with plastic wrap.  Set aside for 10-15 minutes.  When cool enough to handle, remove the blackened skills and dice peppers.

Combine all ingredients in bowl and form into a loaf.  Bake for 1.5 hours.

Meal 2:  Jambalaya - This recipe is from www.allrecipes.com.  Very tasty!  I made it for my family that came into town this weekend and the whole pot was gone!  I made the following revisions:

1.  Eliminate the sausage

2.  Saute veggies and chicken in pan before putting in crockpot

3.  I also added my brown rice to the crock pot.  I added 3 cups broth for every cup of rice.  I think I added in total 6 cups broth and 2 cups rice.  Cook on low for 6-8 hours or on high for 4.

Meal 3:  Cilantro lime Chicken  - Revisions are

1.  use clean salsa – I make my own

2.  use clean taco seasoning – They have some of this at Trader Joe’s or use this recipe!
